Cappuccino Pancakes with Mocha Syrup {Recipe}

For those of you working from home, you have probably need the caffeine more so than usual to keep going through lockdown! Our Head Chef Chris has put together this recipe for these simply gorgeous Cappuccino Pancakes with Mocha Syrup.

Served warm, straight from the pan with your fresh cream or ice-cream, nothing can beat them!

Ingredients

  • 200g Plain Flour
  • 1 Tablespoon Baking Powder
  • 1 1/2 Tablespoon Espresso Powder
  • 2 Tablespoons Granulated Sugar
  • 1/2 Teaspoon Salt
  • 1 Egg
  • 235ml Milk
  • 2 Tablespoons Butter, melted

Mocha Syrup Ingredients

  • 1 1/2 Teaspoons Espresso Powder dissolved in 65ml Water
  • 32g Cocoa Powder
  • 32g Granulated Sugar
  • 1/4 Teaspoon Salt
  • 1 Teaspoon Vanilla Extract

Method

  1. In a large mixing bowl, whisk together flour, baking powder, espresso powder, sugar and salt, add the egg, milk and melted butter. Mix until smooth.
  2. Pour desired amount of batter onto a heated pan remembering the more you add the thicker the pancake will be and cook each side until nicely brown. Serve with ice cream and mocha syrup.

Mocha Syrup Method

  1. In a small saucepan, whisk together coffee, cocoa powder, sugar and salt and bring to a simmer over medium-low heat.
  2. Stir until syrup begins to thicken, about 5 minutes.
  3. Remove from heat and stir in vanilla extract.  Can be served warm or chilled.
