Ham, Cheddar & French Onion Style Potato Pie

Serves: 4
Prep time: 45 minutes
Cooking time: 25 minutes


Ingredients

6 onions, peeled and thinly sliced
75 ml white wine or lager
500 ml chicken stock
2 garlic cloves, finely chopped
2 bay leaves
2 leeks, thinly sliced
2 cups frozen peas
300 g cooked gammon, diced
1 tbsp Dijon mustard
1 tbsp Worcestershire sauce
3 sprigs thyme
1 tbsp sunflower oil
100 g butter
50 g cheddar, grated
200 g mashed potato (pre-made)
½ tsp ground nutmeg
Salt & freshly ground black pepper


Method

1) Caramelise the Onions

Melt the butter in a large skillet with the sunflower oil over medium heat.

Once foaming, add the garlic, sliced leeks, nutmeg and onions. Cook gently, stirring frequently.

Reduce the heat and cook low and slow for around 20 minutes, allowing the onions to soften and become sweet without browning.

Add the white wine or lager along with the bay leaves and cook for 5 minutes.

Pour in the chicken stock, add the thyme and allow the mixture to simmer until reduced by half. The onions should be soft, rich and full of flavour.


2) Finish the Pie Filling

Remove from the heat.

Stir through the diced gammon and frozen peas.
Add the Dijon mustard and a few drops of Worcestershire sauce.

Season carefully with salt and freshly ground pepper, tasting as you go.


3) Build & Bake

Preheat the oven to 200°C / Gas Mark 6.

Spoon the onion and ham mixture into an ovenproof dish, spreading evenly.

Top generously with the mashed potato, smoothing the surface with the back of a spoon.

Sprinkle over the grated cheddar.

Bake for 20–25 minutes, until golden brown, bubbling and crisp on top.

Allow to rest for a few minutes before serving.
