Prep time: 20 minutes
Cooking time: 15 minutes

🧈 Ingredients

For the churros batter

  • 240 g water
  • 50 g unsalted butter, diced
  • 25 g white granulated sugar
  • 1 pinch cinnamon
  • 1 pinch nutmeg
  • 1/4 tsp salt
  • 125 g all-purpose flour
  • 1 egg, at room temperature
  • 1 tsp vanilla extract

For the cinnamon sugar

  • 100 g white granulated sugar
  • 2 tsp ground cinnamon

For the salted caramel sauce

  • 200 g sugar
  • 100 ml cream
  • 50 g butter, diced
  • 1 pinch sea salt

Method

Make the churro dough

  1. In a medium saucepan over medium–high heat, bring the water, butter, spices, salt, and sugar to a gentle simmer.
  2. Once the butter has fully melted, add the flour in one go and stir quickly with a spatula.
  3. Continue stirring until the dough becomes thick and pulls away from the sides of the pan. Transfer to a large bowl.
  4. Allow the dough to cool for 2–3 minutes.
  5. Add the egg and vanilla extract, mixing vigorously until fully incorporated.
  6. Spoon the dough into a piping bag fitted with a star nozzle and pipe churros onto a lined baking tray.
  7. Chill the piped churros for 1 hour in the fridge or 10 minutes in the freezer to help them hold their shape.

Prepare the cinnamon sugar

  • Mix the sugar and cinnamon together in a shallow bowl; set aside for tossing later.

Make the salted caramel sauce

  1. In a medium saucepan over medium–high heat, combine the sugar with a splash of water and stir to dissolve.
  2. Cook without stirring for 10–12 minutes, until deep amber in colour.
  3. Remove from the heat and carefully whisk in the cream — it will bubble vigorously.
  4. Add the butter, whisk until smooth, then season with sea salt to taste.
  5. Set aside to thicken slightly as it cools.

Cook the churros

  1. Preheat your air fryer to 190°C.
  2. Lightly spray the churros with sunflower oil.
  3. Air fry for 8–10 minutes or until crisp and golden.
  4. While warm, toss the churros in the cinnamon sugar.

Serve

Pile the warm churros high and dip generously into the silky salted caramel sauce. Perfect for sharing during the Toy Show — if they last that long!
